Loaded Baked Potato Soup

Ingredients

6 russet or yellow potatoes

Butter

Bacon (optional)

Cheddar cheese

Flour

Milk

How To Make

Bake 6 potatoes, peel, and dice

Cook 1 lb. bacon and break into pieces

  1. Melt ½ cup butter in a soup pot
  2. Add flour to make a semi-thick
    rue
  3. Slowly stir in 6-7 cups of milk – the intent is to thicken as you add

Add:

  • 4 cups of shredded cheddar cheese
  • Diced potatoes
  • Bacon

Baked Fish (Oven & No Oven)

Ingredients

3 tablespoons honey

3 tablespoons money

1 teaspoon lemon juice

4 (6 ounces) salmon/tilapia fillet

½ teaspoon pepper

How To Make

  • Preheat oven to 325 degrees F (165 degrees C)
  • ​​In a small bowl, mix honey, mustard, and lemon juice. Spread the mixture over the salmon steaks. Season with pepper. Arrange in a medium baking dish.
  • Bake 20 minutes in the preheated oven, or until fish easily flakes with a fork.

If there is no oven, you can pan-fry. Make sure to grease the pan with a lot of butter/cooking spray (better with a non-stick pan).

Greek Piperies Me Tyri

Ingredients

18 to 20 bull's horn peppers (or Anaheim peppers)

1 1/3 pounds feta cheese

3 tablespoons olive oil

4 heaping tablespoons parsley (finely chopped)

2 small hot peppers (finely chopped) or chili powder

1/2 teaspoon salt

1/2 teaspoon pepper

1 loaf of bread

How To Make

  1. Gather the ingredients.
  2. Preheat the oven to 390 F/200 C.
  3. Cut a cap off the tops of the peppers and scoop out seeds, taking care not to break or tear the pepper.
  4. In a bowl, mash the feta with a fork until soft. Add oil, parsley, hot peppers, salt, and pepper and mix until very well combined.
  5. Using a small spoon, stuff the cheese mixture into the peppers (pressing down with the handle of the spoon to completely fill) to 1/2-inch from the top.
  6. Press a small piece of bread into the pepper to keep the cheese filling from melting out during cooking. Place the caps back on each pepper.
  7. Lay the peppers in a lightly greased or nonstick baking pan and roast for 20 minutes or until they soften in a 390 F/200 C preheated oven.
  8. Serve hot and enjoy!

Italian Bruschetta Pizzaiola

Ingredients

1 baguette, sliced

1 (8-ounce) ball fresh mozzarella

1 pint cherry tomatoes, quartered

1 handful fresh basil, plus more for garnish

Extra-virgin olive oil, for serving

Salt and black pepper

How To Make

  1. Preheat the oven to 375 degrees F.
  2. On a high heat, toast the bread using a stovetop grill, then set aside on a cookie sheet pan.
  3. In a bowl, mix together the mozzarella and tomatoes, season very lightly with olive oil and salt and pepper. Stir well and top the bread with the mixture and place on the sheet pan.
  4. Cook in the oven for about 10 minutes, or until the cheese has melted and starts to crisp into a nice golden color, then place in a platter and allow to cool off for a few minutes before serving.
  5. Dress with a couple leaves of freshly picked basil, a drizzle of extra-virgin oil, salt, and pepper.

Mustard Green Pork Rice

Ingredients

2 cups uncooked rice
2 bunch mustard greens, washed and cut into bite-size pieces
8 garlic cloves, minced
1/4 pc ginger, thinly sliced
1 slab pork belly, marinated with 2 tsp soy sauce and 1 tsp sesame oil, sliced into bite size pieces
2 cups mushrooms, sliced into medium pieces
2 tbs soy sauce
1 tbs sesame oil
Optional: drizzle 1 tbs soy sauce and 2 tbs sesame oil on top when done

How To Make

1. Wash the rice twice and drain well
2. Heat up wok & add sesame oil to it
3. Saute ginger till fragrant
4. Add garlic and saute
5. Add mushrooms and saute till fragnant
6. Add pork belly and stir-fry till pork belly is half cooked
7. Add in rice
8. Add in soy sauce and stir well
9. Add in mustard greens and stir well
10.Scoop mixture into rice cooker and cover with sufficient water
11. Cook as per instructions on rice cooker
12. Serve and share with your friends and loved ones!
